veggie burgers by elisavet!


Need a healthy, vegan and super delicious burger? You came to the right place, cause today Elisavet shares her ultimate meat-free recipe full of flavour! Try these chickpea veggie burgers, make your own beetroot hummus at home and impress your guests. These guys are the yummiest, I swear!


Beetroot Hummus:
4 beetroots, cooked
1 garlic clove, roughly chopped
2 teaspoons ground cumin
2 tablespoons balsamic cream
1 tablespoon tahini
juice of 1 lemon
sea salt and ground black pepper
2 tablespoons sesame seeds, toasted to serve

Method: Blitz all the ingredients except for the sesame seeds together in a food processor until smooth. Season with salt and pepper, spoon in to a bowl and leave aside.

Chickpea Burgers:

1×400 g tin of chickpeas, drained and rinsed
60g breadcrumbs
2 tablespoons tahini paste
1 tablespoon all purpose flour
1 teaspoon ground cumin
3 spring onions. chopped
2 tablespoons olive oil
1teaspoon mustard
sea salt and ground black pepper
to serve: Beetroot Hummus (above), red cabbage, avocado, alfaalfa sprouts


Method: Place half the chickpeas in a food processor with the breadcrumbs, tahini paste, cumin, flour, mustard and blitz until smooth. Remove the blade and add the remaining chickpeas and the spring onions. Season with sea salt and ground black pepper. With this mixture make four burgers. Place on a plate and cover, leaving it to sit in the fridge for at least 1 hour to firm up. Place a large frying pan over a medium high heat and add the oil. Fry the burgers in the pan for five to six minutes on each side until they are nice and nice and golden.Serve the burgers with the hummus, avocado, sprouts, and red cabbage. Enjoy!
