healthy vegetable pizzas & more!

Want something healthy and low carb for a movie night with friends? Well, Elisavet has the perfect recipe for you. Her mini vegetable pizzas are delicious and guilt-free!  If you are in the mood for some cold beer and chit chat, you can try our bigger platter with different savoury delicacies. Serve the mini vegetable pizzas and add spicy Greek olives, hand cooked vegetable crisps and tinned sardines. Sounds good?

Elisavet made three different pizzas using zucchini, aubergine, and butternut squash. She also tried some “pesto hints” here and there and freshly chopped spring onions.

For the Vegetable Pizzete:

1/2 of butternut squash
1 round zucchinni
1 small aubergine
tomato salsa
chopped buffalo mozzarella
parmesan cheese
salt
pepper
extra virgin olive oil
spring onions and pesto (optional for garnish)

The procedure: Peel the squash and cut into 1cm thick slices. Cut the zucchini and aubergine into 1cm thick slices too. Season with salt and pepper and salsa on top ( you can also use tomato and onion chutney instead of tomato salsa) . Place them in the oven for 15min. Then add mozzarella and gril for 5 more minutes. Serve the pizzette while still warm. Add some pesto and spring onions for garnish. Enjoy!
