Cherry Tomato and Feta Cheese Tart:
- 1 package Pate Brisee (tart dough),chilled in the refrigerator for at least an hour
- 1 1/4 cups feta cheese,coarsely crumbled or chopped
- 1 cup ricotta cheese
- 3/4 cup sun-dried tomatoes chopped
- 1 tablespoon capers
- 3 eggs
- 25-30 cherry tomatoes
- 1 tablespoon fresh oregano
- 1 tablespoon thyme
- 3 tablespoons olive oil
- salt and pepper
In a frying pan stir together 2 tablespoons olive oil with 1 teaspoon balsamic vinegar and toss the tomatoes until the skins are split and the tomatoes start to golden.Remove from the heat and set aside to cool while preparing the rest.
In a large bowl whisk the eggs and add the ricotta,the feta cheese,the sun-dried tomatoes and the capers.Season with salt,pepper,fresh oregano and thyme.
Butter and line a 24cm tart pan with the dough.Pour carefully the cheese mix and arrange the cherry tomatoes on top.
Preheat the oven to 190°C and bake for about 40 minutes until the filling is puffed up and the top and edges start to golden. Good luck!
